PASTA MASTERCLASSES WITH CARMELA SERENO + dinner
10.30 am – 1 pm – Semola shaping with Carmela Sereno: Learn how to make semola di grano duro rimacinata dough and shape the dough into a variety of shapes, perfect for you to take away and cook. The shapes we will make: Cavatelli /Maccheroni al ferretto/ Gnocchetti sardi/ Troffie/ Doppio cavatelli/ Spizzulusi
NEW! 1 pm – 3.30 pm: Tortelli making class
Carmela will and demonstrate to all students how to make the most wonderful tortelli filled pasta. Starting off with a cherry tomato sauce, demonstrated by Carmela, followed by a seasonal filling. All students will then make their dough, followed by filling and forming their tortelli.
After that you can enjoy a pasta dinner cooked by Veronika from The Pasta Shop Darlington.

22nd FEBRUARY
10.30 am – 1 pm: LASAGNE MAKING CLASS
We will all start off by making an egg dough and rolling it into lasagne sheets, before completing and layering our lasagne with Carmela’s family recipe. Traditionally a dish from Molise, this lasagne with be layered with a beef and pork sugo, sliced eggs, mozzarella and Parmigiano Reggiano. Then take your lasagne home to bake, but will be able to enjoy a pasta lunch cooked by Veronika from The Pasta Shop Darlington.

1 pm – 3.30 pm: Ravioli masterclass + dinning
Carmela will demonstrate how to make spätzle pasta with a classic speck and taleggio sauce.
All students will then make filled cappellacci pasta to take home, but will be able to enjoy pasta dinner cooked by Veronika from The Pasta Shop Darlington.
